- 1 cup cherry tomatoes, halved
Instructions
- Prepare the Corn: Boil or grill fresh corn until tender. Let cool and cut off kernels. Canned corn can be used as an alternative.
- Combine Ingredients: In a large bowl, mix together the chopped chipotle peppers, red onion, cherry tomatoes, and cilantro.
- Season the Salsa: Squeeze fresh lime juice over the mixture and add salt to taste. Toss gently until everything is well combined.
- Taste and Adjust: Sample the salsa to see if more seasoning is needed.
- Serve or Chill: Enjoy immediately or refrigerate for at least 30 minutes to allow flavors to meld.
