Instructions
- Prep your ingredients by chopping the red onion, halving the cherry tomatoes, and mincing the chipotle peppers.
- In a large bowl, combine corn kernels, diced red onion, and halved cherry tomatoes. Stir gently to mix.
- Add chopped cilantro and minced chipotle peppers to the bowl. Squeeze in fresh lime juice and season with salt and pepper; mix well.
- Taste test and adjust seasoning if necessary.
- Cover with plastic wrap and refrigerate for at least 30 minutes to allow flavors to meld.
