- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, cold
- 1/2 cup fresh lemon juice (about 2–3 lemons)
- 2 large eggs
- 1 teaspoon baking powder
- Powdered sugar for dusting
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking pan.
- In a mixing bowl, combine flour, granulated sugar, and cold butter until crumbly. Press into the bottom of the prepared pan to form the crust.
- Bake for about 20 minutes or until lightly golden brown.
- In another bowl, whisk together eggs, granulated sugar, lemon juice, baking powder, and lemon zest until smooth.
- Pour the filling over the baked crust and return to the oven for an additional 25-30 minutes until set but slightly jiggly in the center.
- Let cool completely before slicing and dust with powdered sugar before serving.
