Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, cold
  • 1/2 cup fresh lemon juice (about 23 lemons)
  • 2 large eggs
  • 1 teaspoon baking powder
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking pan.
  2. In a mixing bowl, combine flour, granulated sugar, and cold butter until crumbly. Press into the bottom of the prepared pan to form the crust.
  3. Bake for about 20 minutes or until lightly golden brown.
  4. In another bowl, whisk together eggs, granulated sugar, lemon juice, baking powder, and lemon zest until smooth.
  5. Pour the filling over the baked crust and return to the oven for an additional 25-30 minutes until set but slightly jiggly in the center.
  6. Let cool completely before slicing and dust with powdered sugar before serving.
