Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter (room temperature)
  • 3 large eggs
  • 1 cup fresh lemon juice (about 46 lemons)
  • Zest of 2 lemons
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8-inch square baking dish.
  2. In a bowl, mix melted butter and sugar until combined. Add flour and salt; mix until crumbly, then press into the bottom of the baking dish.
  3. Bake the crust for 15 minutes until golden brown.
  4. In another bowl, whisk together eggs, sugar, lemon juice, zest, and vanilla until smooth.
  5. Pour the lemon filling over the warm crust and bake for another 20–25 minutes until set but slightly jiggly in the center.
  6. Allow it to cool completely before slicing into squares. Dust with powdered sugar if desired.
