Ingredients
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter (room temperature)
- 3 large eggs
- 1 cup fresh lemon juice (about 4–6 lemons)
- Zest of 2 lemons
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8-inch square baking dish.
- In a bowl, mix melted butter and sugar until combined. Add flour and salt; mix until crumbly, then press into the bottom of the baking dish.
- Bake the crust for 15 minutes until golden brown.
- In another bowl, whisk together eggs, sugar, lemon juice, zest, and vanilla until smooth.
- Pour the lemon filling over the warm crust and bake for another 20–25 minutes until set but slightly jiggly in the center.
- Allow it to cool completely before slicing into squares. Dust with powdered sugar if desired.
