- 1 cup medium couscous
- 1 ½ cups water
- 1 cup bell peppers (mixed colors), chopped
- 1 cup zucchini, sliced
- ½ cup red onion, sliced
- 2 tbsp freshly squeezed lemon juice
- Zest from ½ lemon
- 2 tbsp extra virgin olive oil
- 2 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 1 tsp fresh thyme, chopped
- Salt and pepper to taste
Instructions
- Chop veggies into uniform bite-sized pieces and finely chop fresh herbs.
- In a medium pot, bring water to a boil. Stir in couscous, turn off heat, cover, and let steam for about 5 minutes until fluffy.
- Preheat your grill to medium-high heat. Toss vegetables in olive oil, garlic, salt, and pepper. Grill for 8–10 minutes until nicely charred.
- Fluff couscous with a fork then mix in lemon juice, lemon zest, grilled veggies, and fresh herbs until well combined.
- Transfer to a serving bowl and enjoy as a standalone dish or paired with grilled proteins.
