  • 1 ½ cups water
  • 1 cup bell peppers (mixed colors), chopped
  • 1 cup zucchini, sliced
  • ½ cup red onion, sliced
  • 2 tbsp freshly squeezed lemon juice
  • Zest from ½ lemon
  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tsp fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Chop veggies into uniform bite-sized pieces and finely chop fresh herbs.
  2. In a medium pot, bring water to a boil. Stir in couscous, turn off heat, cover, and let steam for about 5 minutes until fluffy.
  3. Preheat your grill to medium-high heat. Toss vegetables in olive oil, garlic, salt, and pepper. Grill for 8–10 minutes until nicely charred.
  4. Fluff couscous with a fork then mix in lemon juice, lemon zest, grilled veggies, and fresh herbs until well combined.
  5. Transfer to a serving bowl and enjoy as a standalone dish or paired with grilled proteins.
