- 1 cup quinoa
- 2 cups water
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- ½ small red onion, finely diced
- ½ cup fresh parsley, chopped
- Juice of 1 large lemon
- 3 tablespoons extra virgin olive oil
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water until clear. In a pot, bring quinoa and water to a boil. Reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
- While quinoa cooks, prepare the vegetables: dice cucumber, halve cherry tomatoes, and finely dice red onion.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Once quinoa has cooled slightly, fluff it with a fork and combine with veggies in a large bowl. Drizzle dressing over the top and toss gently.
- Add chopped parsley and mix again to incorporate before serving.
