- 1 ½ cups all-purpose flour

- ¾ cup granulated sugar
- 2 tbsp poppy seeds
- 2 large eggs (room temperature)
- ½ cup milk (or almond milk)
- ½ cup unsalted butter (melted)
- Zest and juice of 1 lemon
Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners.
- In a large bowl, whisk together flour, baking powder, salt, sugar, and poppy seeds.
- In another bowl, mix melted butter, milk, eggs, lemon zest, and juice until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined; lumps are fine.
- Fill each muffin cup about two-thirds full with batter.
- Bake for 18-20 minutes or until golden brown and a toothpick comes out clean.
- Cool in the pan for a few minutes before transferring to a wire rack.
