  • 1 tsp baking powder
  • ½ tsp salt
  • ¾ cup granulated sugar
  • 2 tbsp poppy seeds
  • 2 large eggs (room temperature)
  • ½ cup milk (or almond milk)
  • ½ cup unsalted butter (melted)
  • Zest and juice of 1 lemon

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners.
  2. In a large bowl, whisk together flour, baking powder, salt, sugar, and poppy seeds.
  3. In another bowl, mix melted butter, milk, eggs, lemon zest, and juice until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined; lumps are fine.
  5. Fill each muffin cup about two-thirds full with batter.
  6. Bake for 18-20 minutes or until golden brown and a toothpick comes out clean.
  7. Cool in the pan for a few minutes before transferring to a wire rack.
