Instructions
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, mix ricotta, eggs, milk, and lemon zest until smooth.
- Gently fold the wet ingredients into the dry ingredients until just combined.
- Preheat a nonstick skillet over medium heat and add butter or oil.
- Pour 1/4 cup of batter onto the skillet for each pancake; cook until bubbles form (about 2-3 minutes).
- Flip and cook until golden brown on both sides.
- Serve warm with maple syrup and fresh berries.
