Instructions
- Gather all ingredients on your counter.
- Juice the lemons into a bowl or jar until you have about 1/4 cup of juice, removing any seeds.
- Add 3/4 cup olive oil, 1 tablespoon Dijon mustard, and 1 tablespoon honey (or maple syrup) to the lemon juice.
- Season with salt and pepper to taste.
- Secure the lid on the jar or whisk vigorously in a bowl until emulsified and golden in color.
- Taste test using a cucumber slice or lettuce; adjust sweetness or seasoning as needed.
