- 4 boneless, skinless chicken breasts
- 1 cup salsa
- 1 tbsp olive oil
- ¼ cup fresh cilantro, chopped (for garnish)
- 2 tbsp lime juice (freshly squeezed)
- 1 tsp cumin
- 1 tsp chili powder
- 1 can (15 oz) black beans, rinsed
- 1 cup corn (frozen or canned)
- 1 cup shredded cheddar or pepper jack cheese
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a baking dish with olive oil.
- Season the chicken breasts with cumin and chili powder on both sides.
- In a bowl, mix together the salsa, black beans, and corn.
- Place the seasoned chicken in the baking dish and pour the salsa mixture over it. Cover with foil and bake for 25 minutes.
- Remove foil, sprinkle cheese on top, and bake uncovered for another 10 minutes until cheese is melted.
- Drizzle lime juice over the dish and garnish with chopped cilantro before serving.
