  • 4 boneless, skinless chicken breasts
  • 1 cup salsa
  • 1 tbsp olive oil
  • ¼ cup fresh cilantro, chopped (for garnish)
  • 2 tbsp lime juice (freshly squeezed)
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 can (15 oz) black beans, rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup shredded cheddar or pepper jack cheese

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish with olive oil.
  2. Season the chicken breasts with cumin and chili powder on both sides.
  3. In a bowl, mix together the salsa, black beans, and corn.
  4. Place the seasoned chicken in the baking dish and pour the salsa mixture over it. Cover with foil and bake for 25 minutes.
  5. Remove foil, sprinkle cheese on top, and bake uncovered for another 10 minutes until cheese is melted.
  6. Drizzle lime juice over the dish and garnish with chopped cilantro before serving.
