Ingredients
- 1 lb chicken breast, cubed
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 3 cloves garlic, minced
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 1 bell pepper, chopped
- 1 zucchini, sliced
- 1 cup corn kernels (fresh or frozen)
Instructions
- Prepare the marinade by whisking together olive oil, lemon juice, garlic, paprika, salt, and pepper in a bowl.
- Marinate the chicken in a resealable bag or bowl for at least 30 minutes in the fridge.
- While marinating, chop the bell pepper and slice the zucchini into even pieces.
- Thread the marinated chicken and vegetables onto skewers alternately.
- Preheat your grill to medium-high heat (375°F/190°C).
- Grill the skewers for about 10-12 minutes, turning occasionally until cooked through.
