- 1 medium spaghetti squash (about 3 pounds)
 - 2 tbsp extra virgin olive oil
 - 1 tsp sea salt
 - 1/2 tsp freshly cracked black pepper
 - 1/2 cup freshly grated Parmesan cheese
 - Fresh herbs (optional, such as parsley or basil)
 
Instructions
- Preheat the oven to 400°F (200°C).
 - Carefully cut the spaghetti squash in half lengthwise.
 - Drizzle olive oil inside each half and sprinkle with salt and pepper.
 - Place cut-side down on a lined baking sheet and roast for 35-45 minutes until tender.
 - Once cool, use a fork to scrape out the strands into a bowl.
 - Toss with Parmesan cheese while warm, adjusting seasoning as needed.
 - Add fresh herbs if desired, then serve warm.
