Instructions
- Heat olive oil in a large pot over medium heat. Sauté onions and garlic until fragrant (3-5 minutes).
- Add chicken thighs; sear until golden brown (4-5 minutes per side).
- Stir in bell peppers and mixed root vegetables. Pour in chicken broth until just submerged.
- Season with herbs, salt, and pepper; stir gently.
- Cover and simmer on low for 25-30 minutes until chicken is cooked through and tender.
- Let rest before serving; garnish with fresh herbs if desired.
