- 1 cup sun-dried tomatoes (packed in oil)
- 8 oz penne pasta
- 1/4 cup fresh basil leaves
- 3 cloves garlic, minced
- 2 tbsp extra virgin olive oil
- 1/2 cup freshly grated Parmesan cheese
- 1/4 cup toasted pine nuts (optional)
Instructions
- Prep your ingredients: Finely chop garlic and basil; drain excess oil from sun-dried tomatoes.
- Cook the pasta: Boil salted water in a large pot, add penne, and cook until al dente. Reserve 1/2 cup pasta water before draining.
- Sauté garlic & tomatoes: In a skillet over medium heat, heat olive oil, sauté garlic until fragrant (about 1 minute), then add sun-dried tomatoes.
- Combine flavors: Add drained pasta and reserved water slowly, stirring until coated.
- Toss in basil & cheese: Remove from heat, mix in basil and Parmesan until well combined.
- Serve & enjoy: Plate with additional Parmesan and toast pine nuts if desired.
