- 1 lb boneless skinless chicken thighs
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 cup bell peppers, chopped (any colors)
- 1 cup low-sodium chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Prepare your ingredients by chopping the onion and bell peppers and mincing the garlic.
- In a large pot over medium heat, add olive oil and sauté the onion until translucent (about 5 minutes). Add garlic and cook for an additional minute.
- Add chicken thighs to the pot and sear until golden brown on both sides (approximately 4-5 minutes per side).
- Stir in bell peppers, diced tomatoes, chicken broth, thyme, oregano, salt, and pepper. Mix well.
- Bring to a gentle boil, then reduce heat to low. Cover and simmer for about 25-30 minutes until the chicken is cooked through.
- Taste-test for seasoning adjustments before serving hot with rice or pasta.
