  • 4 cod fillets (about 6 oz each)
  • 2 tbsp olive oil
  • 3 tbsp butter
  • 2 cloves garlic, minced
  • 2 tbsp fresh lemon juice
  • 1/2 cup panko breadcrumbs
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish with olive oil.
  2. Place cod fillets in the dish and season generously with salt and pepper.
  3. In a saucepan over medium heat, melt butter, then add minced garlic and sauté until fragrant (about 1 minute). Remove from heat and stir in lemon juice.
  4. In a bowl, combine panko breadcrumbs with chopped parsley and drizzle with olive oil. Mix until evenly coated.
  5. Spread the buttery garlic mixture over each cod fillet and top with the breadcrumb mixture.
  6. Bake for 15-20 minutes or until the fish flakes easily with a fork and the top is golden brown.
