- 4 cod fillets (about 6 oz each)
- 2 tbsp olive oil
- 3 tbsp butter
- 2 cloves garlic, minced
- 2 tbsp fresh lemon juice
- 1/2 cup panko breadcrumbs
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a baking dish with olive oil.
- Place cod fillets in the dish and season generously with salt and pepper.
- In a saucepan over medium heat, melt butter, then add minced garlic and sauté until fragrant (about 1 minute). Remove from heat and stir in lemon juice.
- In a bowl, combine panko breadcrumbs with chopped parsley and drizzle with olive oil. Mix until evenly coated.
- Spread the buttery garlic mixture over each cod fillet and top with the breadcrumb mixture.
- Bake for 15-20 minutes or until the fish flakes easily with a fork and the top is golden brown.
