Apple Fritter Batter
* 2 cups (8 oz/225 g) Granny Smith apples
* 1 cup (5 oz/142 g) all-purpose flour
* 2 teaspoons baking powder
* 1 ½ teaspoons cinnamon
* 2 large eggs
* ⅓ cup (2 ½ fl oz/80ml) buttermilk
* 2 tablespoons dark brown sugar
* 1 teaspoon vanilla extract
* Vegetable oil, for frying
