Instructions
- Gather all ingredients and prep your fillings by chopping vegetables and grating cheese.
- In a bowl, whisk the eggs until frothy; season with salt and pepper.
- Heat a non-stick skillet over medium heat and add butter until bubbly.
- Pour in the egg mixture and swirl gently for even cooking.
- Before eggs set (about 1-2 minutes), sprinkle fillings on one half.
- Fold the omelette over when edges are firm but still soft inside.
- Cook for another minute until cheese melts; serve hot.
