- 4 boneless, skinless chicken breasts (about 1 lb)
- 3 cloves fresh garlic, minced
- 1-inch piece fresh ginger, grated
- 1/2 cup freshly squeezed orange juice
- 1/4 cup brown sugar
- 1/4 cup low-sodium soy sauce
- 1/2 cup cornstarch
- 1/4 cup vegetable oil (canola or peanut)
- 2 green onions, chopped (for garnish)
- Sesame seeds (optional)
Instructions
- Cut chicken breasts into bite-sized pieces and pat dry.
- In a bowl, mix garlic, ginger, soy sauce, and orange juice. Marinate chicken for at least 30 minutes.
- Whisk together brown sugar, soy sauce, and remaining orange juice for the sauce.
- Coat marinated chicken pieces in cornstarch.
- Heat vegetable oil in a skillet over medium-high heat. Fry chicken until golden brown (5-7 minutes). Avoid overcrowding the pan.
- Add fried chicken back to the skillet with the sauce; stir to coat and heat through (2-3 minutes).
- Serve hot, garnished with green onions and sesame seeds.
