- 12 frozen potstickers
- 4 cups mixed greens (spinach and arugula)
- 1 cup julienned carrots
- 1 cup sliced cucumber
- 2 tbsp low-sodium soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tsp honey
Instructions
- Heat 1 tablespoon of oil in a large skillet over medium heat. Add frozen potstickers and cook until golden brown on one side.
- Carefully pour in half a cup of water, cover the skillet, and steam the potstickers for about 5-7 minutes until fully cooked.
- While potstickers are cooking, julienne carrots and slice cucumbers. Toss them together with mixed greens in a large bowl.
- In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, and honey until well combined.
- Once potstickers are cooked through, let them cool slightly before adding to the bowl of greens and veggies. Drizzle with dressing and toss gently.
