  • 12 frozen potstickers
  • 4 cups mixed greens (spinach and arugula)
  • 1 cup julienned carrots
  • 1 cup sliced cucumber
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp honey

Instructions

  1. Heat 1 tablespoon of oil in a large skillet over medium heat. Add frozen potstickers and cook until golden brown on one side.
  2. Carefully pour in half a cup of water, cover the skillet, and steam the potstickers for about 5-7 minutes until fully cooked.
  3. While potstickers are cooking, julienne carrots and slice cucumbers. Toss them together with mixed greens in a large bowl.
  4. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, and honey until well combined.
  5. Once potstickers are cooked through, let them cool slightly before adding to the bowl of greens and veggies. Drizzle with dressing and toss gently.
