- 4 boneless, skinless chicken breasts
- 1 cup seasoned breadcrumbs
- 2 cups marinara sauce
- 8 oz fresh mozzarella cheese, sliced
- 1/2 cup grated parmesan cheese
- 1/4 cup fresh basil leaves (or dried)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
- Season both sides of the chicken breasts with salt and pepper.
- Set up a breading station with three shallow bowls: one for flour, another for beaten eggs, and the last for breadcrumbs mixed with grated parmesan.
- Dip each chicken breast in flour, then egg, and finally coat thoroughly with the breadcrumb mixture.
- Heat olive oil in a skillet over medium heat. Sear each breaded piece of chicken until golden brown on both sides (about 3-4 minutes per side).
- Transfer the browned chicken to the prepared baking dish, cover with marinara sauce, and top with mozzarella slices.
- Bake for 20-25 minutes until bubbly and golden brown.
- Garnish with fresh basil before serving.
