- 1 cup dried chickpeas (soaked overnight)
- 1/2 cup fresh parsley
- 3 garlic cloves
- 1 tsp cumin powder
- 1 tsp coriander powder
- Salt and pepper to taste
- 2 tbsp all-purpose flour
- Pita bread or tortillas
- Garlic tahini sauce (tahini, lemon juice, water)
Instructions
- Drain and rinse soaked chickpeas. In a food processor, blend chickpeas, parsley, garlic, cumin, coriander, salt, and pepper until the mixture is coarse.
- Form the mixture into small balls or patties and place them on a parchment-lined baking sheet.
- Heat oil in a skillet over medium-high heat; fry falafels until golden brown. Alternatively, bake at 375°F (190°C) for about 25 minutes until crispy.
- For the garlic tahini sauce, whisk together tahini with minced garlic, lemon juice, and enough water to achieve a creamy consistency.
- Assemble wraps by filling pita breads or tortillas with falafels and drizzling generously with garlic tahini sauce.
