- 1 lb kielbasa, sliced into thick rounds
- 2 cups bell peppers, chopped (mix of red, yellow, green)
- 1 large red onion, sliced
- 1 lb baby potatoes, halved
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- In a bowl, combine chopped bell peppers, red onion, and baby potatoes. Drizzle with olive oil and season with thyme, oregano, garlic powder, salt, and pepper. Toss until evenly coated.
- Add the sliced kielbasa to the bowl and mix well.
- Spread the mixture evenly on the prepared baking sheet.
- Bake for 25-30 minutes until vegetables are tender and slightly crispy. Stir halfway through for even cooking.
