  • 2 cups bell peppers, chopped (mix of red, yellow, green)
  • 1 large red onion, sliced
  • 1 lb baby potatoes, halved
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a bowl, combine chopped bell peppers, red onion, and baby potatoes. Drizzle with olive oil and season with thyme, oregano, garlic powder, salt, and pepper. Toss until evenly coated.
