Ingredients
- 1 box yellow or vanilla cake mix (15.25 oz)
- 3 large eggs
- 1/2 cup vegetable oil
- 1 cup water
- Zest of 1 large lemon
- 1/4 cup freshly squeezed lemon juice
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
- In a mixing bowl, combine the cake mix, eggs, oil, water, lemon zest, and lemon juice. Whisk until smooth.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 50-60 minutes or until golden brown and a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Slice and serve plain or enhance with whipped cream.
