Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mash the ripe bananas until smooth but slightly chunky.
  3. Mix in sour cream, sugar, eggs, and vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking soda, and salt; then fold into the wet mixture until just combined.
  5. If desired, fold in nuts or chocolate chips.
  6. Pour batter into the greased loaf pan and smooth the top.
  7. Bake for 60-70 minutes or until a toothpick comes out clean. Let cool for ten minutes before transferring to wire racks.
