- 4 ripe bananas (mashed)
- 1/2 cup sour cream
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 tsp salt
- Optional: 1/2 cup walnuts or chocolate chips
Instructions
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mash the ripe bananas until smooth but slightly chunky.
- Mix in sour cream, sugar, eggs, and vanilla extract until well combined.
- In another bowl, whisk together flour, baking soda, and salt; then fold into the wet mixture until just combined.
- If desired, fold in nuts or chocolate chips.
- Pour batter into the greased loaf pan and smooth the top.
- Bake for 60-70 minutes or until a toothpick comes out clean. Let cool for ten minutes before transferring to wire racks.
