Instructions
- Preheat a non-stick skillet over medium heat.
- In a mixing bowl, mash the ripe bananas until smooth but slightly chunky.
- In another bowl, whisk together the flour, baking powder, and salt.
- In a separate bowl, combine the milk, egg, and vanilla extract until well mixed.
- Add the wet mixture to the dry ingredients along with the mashed bananas; stir gently until just combined.
- Pour about 1/4 cup of batter onto the skillet for each pancake; cook until bubbles form (2-3 minutes), flip and cook until golden brown.
- Serve warm with your favorite toppings.
