- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 large sweet potatoes (about 1.5 lbs), peeled and cubed
- 2 tbsp olive oil
- 1 cup BBQ sauce
- ¼ cup fresh cilantro, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and peel the sweet potatoes, then cut them into cubes. Spread on a baking sheet lined with parchment paper, drizzle with 1 tbsp olive oil, season with salt and pepper, and toss to coat. Roast for 25-30 minutes until golden brown.
- In a bowl, mix the remaining olive oil with salt and pepper. Coat the chicken breasts evenly with this mixture.
- Place the seasoned chicken on another baking sheet and bake for 20-25 minutes or until internal temperature reaches 165°F (75°C).
- Brush BBQ sauce over cooked chicken breasts and broil for an additional 2-3 minutes.
- Assemble each bowl by layering roasted sweet potatoes at the bottom, slicing BBQ chicken on top, and garnishing with fresh cilantro.
