Ingredients
- 1 lb lean ground beef
- 1 medium onion, finely chopped
- 8 oz fresh mushrooms, sliced (cremini or button)
- 2 cloves garlic, minced
- 1 cup low-sodium beef broth
- 1 cup full-fat sour cream
- 2 tbsp Worcestershire sauce
- 2 cups egg noodles or rice (cooked)
Instructions
- In a large skillet over medium heat, add oil and sauté the chopped onion until translucent. Add minced garlic and stir until fragrant.
- Increase heat to medium-high and add the ground beef. Cook until browned, breaking it apart as it cooks.
- Stir in sliced mushrooms and Worcestershire sauce; season with salt and pepper. Cook until mushrooms are tender.
- Gradually pour in beef broth while scraping up browned bits from the skillet. Simmer for about 5 minutes.
- Reduce heat to low and mix in sour cream until creamy and heated through; do not boil.
- Serve over cooked pasta or rice, garnished with fresh parsley if desired.
