- 1 can (15 oz) butter beans, rinsed and drained
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 medium onion, chopped
- 1 cup low-sodium vegetable broth
- 2 tsp fresh thyme or rosemary
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté until translucent.
- Stir in minced garlic and fresh herbs; cook until aromatic (about 1-2 minutes).
- Gently fold in the butter beans and pour vegetable broth over them. Bring to a simmer.
- Season with salt and pepper, then let simmer on low heat for 10-15 minutes until flavors meld.
- Serve warm alongside crusty bread or over rice.
