  • 1 medium onion, chopped

  • 2 medium carrots, diced
  • 2 stalks celery, chopped
  • 4 cups low-sodium beef broth
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • Optional: cooked bacon bits for topping

Instructions
