- 1 lb lean ground beef
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 medium carrots, diced
- 2 stalks celery, chopped
- 4 cups low-sodium beef broth
- 2 cups shredded cheddar cheese
- 1/2 cup sour cream
- Optional: cooked bacon bits for topping
Instructions
- In a large pot over medium heat, brown 1 lb of ground beef until fully cooked. Drain excess grease.
- Add chopped onion, minced garlic, diced carrots, and chopped celery to the pot. Sauté until onions are translucent (about 5 minutes).
- Pour in 4 cups of low-sodium beef broth and bring to a gentle boil. Reduce heat and simmer for 15 minutes.
- Stir in 2 cups of shredded cheddar cheese and 1/2 cup of sour cream until melted and creamy.
- Taste and adjust seasoning with salt and pepper as needed.
- Serve hot in bowls, topped with additional cheese or crispy bacon bits.
