- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 tablespoons extra virgin olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika (optional)
- 2 bell peppers (mixed colors), chopped
- 1 medium zucchini, sliced
- 1 red onion, cut into wedges
- Fresh parsley or thyme for garnish
Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- In a bowl, season the chicken breasts with olive oil, salt, pepper, garlic powder, and smoked paprika. Massage the seasoning into the chicken.
- Chop bell peppers, zucchini, and red onion into uniform pieces. Toss in olive oil and season with salt and pepper.
- Arrange the seasoned chicken in the center of the baking sheet and scatter veggies around it without overcrowding.
- Roast in the preheated oven for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C) and is golden brown.
- Garnish with fresh herbs before serving.
