  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika (optional)
  • 2 bell peppers (mixed colors), chopped
  • 1 medium zucchini, sliced
  • 1 red onion, cut into wedges
  • Fresh parsley or thyme for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a bowl, season the chicken breasts with olive oil, salt, pepper, garlic powder, and smoked paprika. Massage the seasoning into the chicken.
  3. Chop bell peppers, zucchini, and red onion into uniform pieces. Toss in olive oil and season with salt and pepper.
  4. Arrange the seasoned chicken in the center of the baking sheet and scatter veggies around it without overcrowding.
  5. Roast in the preheated oven for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C) and is golden brown.
