- 4 boneless skinless chicken breasts (about 1.5 lbs)
- 1/4 cup extra virgin olive oil
- 4 garlic cloves, minced
- 1/4 cup freshly squeezed lemon juice
- 2 tbsp honey
- 2 tsp paprika
- 1 tsp ground cumin
- Salt and pepper to taste
- 1 red bell pepper, chopped into chunks
- 1 green bell pepper, chopped into chunks
- 1 onion, chopped into chunks
Instructions
- In a mixing bowl, combine olive oil, minced garlic, lemon juice, honey, paprika, cumin, salt, and pepper to create the marinade.
- Cut the chicken breasts into bite-sized pieces and place them in a resealable bag. Pour the marinade over the chicken and coat well. Refrigerate for at least 30 minutes.
- While marinating, wash and chop the bell peppers and onion into similar-sized pieces.
- Thread marinated chicken pieces onto skewers alternately with bell peppers and onions.
- Preheat the grill to medium-high heat (375°F). Grill skewers for about 10-15 minutes, turning occasionally until chicken is cooked through with nice grill marks.
- Allow skewers to rest for a few minutes before serving.
