  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 medium onion, chopped
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup jasmine rice
  • 1 cup frozen peas
  • 2 tsp dried thyme
  • Salt & pepper to taste

Instructions

  2. In a large skillet, heat oil over medium-high heat. Sear the seasoned chicken until golden brown (5-7 minutes per side). Remove from skillet.
  3. Add onions and garlic to the skillet; sauté until fragrant. Stir in jasmine rice until coated.
  4. Slowly pour in chicken broth and heavy cream; bring to a simmer while scraping browned bits off the bottom.
  5. Return seared chicken to the skillet, cover, and cook on low for 18-20 minutes until rice absorbs liquid.
  6. Stir in frozen peas just before serving; they will warm quickly.
