- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 3 cloves fresh garlic, minced
- 1 medium onion, chopped
- 4 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 cup jasmine rice
- 1 cup frozen peas
- 2 tsp dried thyme
- Salt & pepper to taste
Instructions
- Prep your ingredients by chopping the onion and mincing the garlic.
- In a large skillet, heat oil over medium-high heat. Sear the seasoned chicken until golden brown (5-7 minutes per side). Remove from skillet.
- Add onions and garlic to the skillet; sauté until fragrant. Stir in jasmine rice until coated.
- Slowly pour in chicken broth and heavy cream; bring to a simmer while scraping browned bits off the bottom.
- Return seared chicken to the skillet, cover, and cook on low for 18-20 minutes until rice absorbs liquid.
- Stir in frozen peas just before serving; they will warm quickly.
