  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 6 cloves fresh garlic, minced
  • 12 oz fettuccine or penne pasta
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 cup low-sodium chicken broth
  • 2 tbsp olive oil
  • Optional: 2 cups spinach or broccoli

Instructions

  1. Prep your ingredients by finely chopping the garlic.
  2. Cook the pasta in a pot of salted boiling water until al dente (about 8-10 minutes). Drain and set aside.
  3. In a large skillet over medium heat, heat olive oil. Sauté seasoned chicken breasts for about 6-7 minutes per side until golden brown. Remove from skillet.
  4. Lower the heat and add minced garlic to the skillet. Sauté for about 1 minute.
  5. Pour in heavy cream and chicken broth, scraping up any browned bits from the pan. Let it simmer for 3-5 minutes until slightly thickened.
  6. Add cooked pasta and grated Parmesan to the sauce, tossing until well-coated. Stir in spinach or broccoli if using.
  7. Serve hot, garnished with extra cheese as desired.
