- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 6 cloves fresh garlic, minced
- 12 oz fettuccine or penne pasta
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 1 cup low-sodium chicken broth
- 2 tbsp olive oil
- Optional: 2 cups spinach or broccoli
Instructions
- Prep your ingredients by finely chopping the garlic.
- Cook the pasta in a pot of salted boiling water until al dente (about 8-10 minutes). Drain and set aside.
- In a large skillet over medium heat, heat olive oil. Sauté seasoned chicken breasts for about 6-7 minutes per side until golden brown. Remove from skillet.
- Lower the heat and add minced garlic to the skillet. Sauté for about 1 minute.
- Pour in heavy cream and chicken broth, scraping up any browned bits from the pan. Let it simmer for 3-5 minutes until slightly thickened.
- Add cooked pasta and grated Parmesan to the sauce, tossing until well-coated. Stir in spinach or broccoli if using.
- Serve hot, garnished with extra cheese as desired.
