- ¾ cup granulated sugar
- ½ cup unsalted butter (melted)
- 2 large eggs
- ½ cup whole milk (or almond milk)
- 1 tbsp lemon zest
- 2 tbsp fresh lemon juice
- 1 cup fresh blueberries
Instructions
- Preheat your oven to 375°F (190°C) and prepare a muffin tin with liners or grease it.
- In a large bowl, whisk together flour, baking powder, salt, and sugar.
- In another bowl, combine melted butter, eggs, milk, lemon juice, and zest until well mixed.
- Gradually fold the wet ingredients into the dry mixture until just combined; lumps are okay.
- Gently fold in the blueberries.
- Fill muffin cups two-thirds full with batter and bake for 18-20 minutes or until golden brown.
- Cool in the pan for five minutes before transferring to wire racks.
