- 3 cups fresh rhubarb, chopped

Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Rinse and chop the rhubarb into small pieces.
- In a large bowl, combine the cake mix, eggs, oil, sugar, and vanilla extract until just mixed.
- Gently fold in the chopped rhubarb with a spatula.
- Pour the batter into the prepared baking dish and smooth the top.
- Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
- Let cool slightly before slicing; serve warm with whipped cream if desired.
