- 1 ½ cups whole milk ricotta cheese
- 1 cup granulated sugar
- 3 large eggs
- 1 cup all-purpose flour
- 2 tsp baking powder
- 1 tsp pure vanilla extract
- Zest of 1 lemon
- ¼ cup unsalted butter, melted
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8-inch round cake pan.
- In a large bowl, mix the ricotta cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition.
- Stir in vanilla extract and lemon zest.
- In another bowl, whisk together flour and baking powder. Gradually fold into the wet mixture without overmixing.
- Pour batter into the prepared pan and bake for 40-45 minutes until golden brown.
- Let cool for 10 minutes in the pan before transferring to a wire rack.
