Ingredients

  • 1 cup plain breadcrumbs
  • 1 large egg, at room temperature
  • 2 tbsp fresh parsley or dill, chopped
  • 1/2 small onion, finely chopped
  • 1 tbsp lemon juice (fresh is best)
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Gather all ingredients and tools.
  2. Flake the drained salmon in a bowl using a fork.
  3. In a skillet over medium heat, sauté the finely chopped onion in olive oil until soft.
  4. In a large bowl, combine flaked salmon, sautéed onion, breadcrumbs, beaten egg, herbs, lemon juice, salt, and pepper. Mix gently.
  5. Form the mixture into small patties (about 3 inches wide).
  6. Heat oil in a skillet over medium-high heat and fry each patty for 4-5 minutes per side until golden brown.
