- 1 (14.75 oz) can high-quality salmon, drained and flaked
- 1 cup plain breadcrumbs
- 1 large egg, at room temperature
- 2 tbsp fresh parsley or dill, chopped
- 1/2 small onion, finely chopped
- 1 tbsp lemon juice (fresh is best)
- Salt and pepper to taste
- Olive oil for frying
Instructions
- Gather all ingredients and tools.
- Flake the drained salmon in a bowl using a fork.
- In a skillet over medium heat, sauté the finely chopped onion in olive oil until soft.
- In a large bowl, combine flaked salmon, sautéed onion, breadcrumbs, beaten egg, herbs, lemon juice, salt, and pepper. Mix gently.
- Form the mixture into small patties (about 3 inches wide).
- Heat oil in a skillet over medium-high heat and fry each patty for 4-5 minutes per side until golden brown.
- Serve warm with your favorite dipping sauce or salad.
