- 1 pound Yukon Gold potatoes, diced

Instructions
- Start by washing and dicing the Yukon Gold potatoes into bite-sized cubes.
- Let the sirloin steak rest at room temperature for about 15 minutes before cutting it into bite-sized pieces.
- In a bowl, combine the steak with olive oil, minced garlic, salt, pepper, and smoked paprika. Allow to marinate for at least 10 minutes.
- Heat a large skillet over medium-high heat and add olive oil. Once hot, add the potato cubes and cook until golden brown on all sides (about 15 minutes), stirring occasionally.
- Push the potatoes to one side of the skillet and add the marinated steak bites in batches, cooking for about 3-4 minutes until browned.
- Once fully cooked, sprinkle fresh herbs over the dish and give everything a final toss to combine before serving.
