  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 1 cup chopped bell peppers (red and yellow)
  • 1 cup pineapple chunks (fresh or drained canned)
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 1 tsp fresh ginger, grated
  • 2 tbsp cornstarch
  • 2 tbsp vegetable oil (canola or peanut)
  • Green onions for garnish

Instructions

  1. Cut chicken breasts into bite-sized pieces and pat dry.
  2. In a bowl, mix soy sauce, minced garlic, and grated ginger. Marinate chicken in this mixture for at least 30 minutes.
  3. Heat vegetable oil in a pan over medium-high heat. Cook marinated chicken until golden brown (6-8 minutes).
  4. Add chopped bell peppers and pineapple chunks; sauté for 3-4 minutes.
  5. In another bowl, combine brown sugar and cornstarch with water until smooth. Pour over chicken mixture and cook until thickened (2-3 minutes).
  6. Serve over rice or noodles, garnished with green onions.
