- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 2 cloves fresh garlic, minced
- 1 cup chopped bell peppers (red and yellow)
- 1 cup pineapple chunks (fresh or drained canned)
- 1/4 cup low-sodium soy sauce
- 1/4 cup brown sugar
- 1 tsp fresh ginger, grated
- 2 tbsp cornstarch
- 2 tbsp vegetable oil (canola or peanut)
- Green onions for garnish
Instructions
- Cut chicken breasts into bite-sized pieces and pat dry.
- In a bowl, mix soy sauce, minced garlic, and grated ginger. Marinate chicken in this mixture for at least 30 minutes.
- Heat vegetable oil in a pan over medium-high heat. Cook marinated chicken until golden brown (6-8 minutes).
- Add chopped bell peppers and pineapple chunks; sauté for 3-4 minutes.
- In another bowl, combine brown sugar and cornstarch with water until smooth. Pour over chicken mixture and cook until thickened (2-3 minutes).
- Serve over rice or noodles, garnished with green onions.
