- 2 medium sweet potatoes

Instructions
- Peel and dice the sweet potatoes into bite-sized cubes. Chop the red bell pepper and onion.
- Heat olive oil in a large skillet over medium heat. Sauté onion and bell pepper until softened.
- Add diced sweet potatoes and minced garlic; stir to combine.
- Sprinkle cumin and smoked paprika; mix well.
- Cover the skillet and cook on low for about 15 minutes or until sweet potatoes are tender.
- Taste and adjust seasoning before serving hot. Garnish with fresh herbs if desired.
