- 2 cups grated zucchini (about 1–2 medium zucchinis)
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- Grate zucchini and squeeze out excess moisture with a clean kitchen towel.
- In a bowl, whisk together flour, baking powder, cinnamon, and salt.
- In another bowl, mix sugar, vegetable oil, eggs, and vanilla until smooth.
- Fold grated zucchini into the wet mixture. Gradually add dry ingredients until just combined; add nuts if desired.
- Pour batter into the prepared dish and bake for 30-35 minutes until golden brown and a toothpick comes out clean.
- Let cool slightly before slicing.
