  • 1 medium cucumber, thinly sliced
  • 1 ripe avocado, sliced
  • 1 cup carrots, julienned
  • 2 green onions, chopped
  • 3 tbsp rice vinegar
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • Pinch of salt
  • 1 tbsp toasted sesame seeds

Instructions

  1. Prepare your veggies by washing them thoroughly. Slice the cucumber into thin rounds and julienne the carrots.
  2. In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, and salt until combined.
