- 2 tbsp fresh lemon juice
- 1/4 cup fresh herbs (basil or parsley, chopped)
Instructions
- Wash and chop all vegetables: cucumbers, cherry tomatoes, bell peppers, and red onion.
- Soak red onion slices in cold water for 10 minutes to reduce pungency.
- In a small bowl, whisk together olive oil and lemon juice; season with salt and pepper.
- Combine all veggies and feta in a large bowl, drizzle dressing over, and toss gently.
- Chill in the refrigerator for 30 minutes before serving.
