- 4 cups fresh cucumbers, thinly sliced (about 2 medium cucumbers)
- 1 small red onion, thinly sliced
- ½ cup fresh dill, chopped
- ¼ cup white wine vinegar (or apple cider vinegar)
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Wash cucumbers under cold water and slice them thinly using a sharp knife or mandoline.
- Soak the red onion slices in cold water for about 10 minutes to reduce their sharpness.
- In a small bowl, whisk together white wine vinegar and olive oil; season with salt and pepper.
- In a large mixing bowl, combine the cucumbers, drained onions, and chopped dill. Pour the dressing over the top and toss gently until everything is evenly coated.
- Cover and refrigerate for at least 30 minutes to let flavors meld.
- Toss again before serving; garnish with extra dill if desired.
