- 4 boneless, skinless chicken breasts
- 2 cloves fresh garlic, minced
- 1 cup freshly grated jack cheese
- 2 tbsp olive oil
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- Salt and pepper to taste
- 1 tsp paprika
- 1 cup low-sodium chicken broth
- 1/2 cup full-fat sour cream
- 1 tsp chili powder
- 2 tbsp fresh lime juice
Instructions
- Preheat oven to 375°F (190°C). Grease a baking dish.
- Season chicken breasts with salt, pepper, and paprika.
- In a skillet over medium heat, add olive oil and sauté chopped onion and green bell pepper until softened.
- Add seasoned chicken breasts to the skillet; cook until golden brown (about 5 minutes per side).
- Transfer chicken to the baking dish; top with sautéed veggies and sprinkle jack cheese on top.
- Bake for 20-25 minutes or until cheese is melted and chicken reaches an internal temperature of 165°F (75°C).
- While baking, mix sour cream, chili powder, and lime juice in a bowl until smooth.
- Serve hot with sauce drizzled on top.
