  • 1 green bell pepper, chopped

  • 1 tsp paprika
  • 1 cup low-sodium chicken broth
  • 1/2 cup full-fat sour cream
  • 1 tsp chili powder
  • 2 tbsp fresh lime juice

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish.
  2. Season chicken breasts with salt, pepper, and paprika.
  3. In a skillet over medium heat, add olive oil and sauté chopped onion and green bell pepper until softened.
  4. Add seasoned chicken breasts to the skillet; cook until golden brown (about 5 minutes per side).
  5. Transfer chicken to the baking dish; top with sautéed veggies and sprinkle jack cheese on top.
  6. Bake for 20-25 minutes or until cheese is melted and chicken reaches an internal temperature of 165°F (75°C).
  7. While baking, mix sour cream, chili powder, and lime juice in a bowl until smooth.
  8. Serve hot with sauce drizzled on top.
