- 1 lb ground beef (80/20)
- 1 medium yellow onion, chopped
- ½ cup ketchup
- 1 tbsp yellow mustard
- 1 cup shredded sharp cheddar cheese
- 3 large eggs
- 1 cup Bisquick or pancake mix
- Optional: sliced pickles for topping
- Salt & pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, brown the ground beef with chopped onion until no pink remains. Drain excess fat.
- Stir in ketchup and mustard; cook until heated through.
- In a separate bowl, whisk together eggs and Bisquick until smooth. Fold in cheddar cheese.
- Layer half the beef mixture in a greased baking dish, followed by half the egg mixture. Repeat layers.
- Bake for 30-35 minutes or until golden brown on top.
