  • 1 lb ground beef (80/20)
  • 1 medium yellow onion, chopped
  • ½ cup ketchup
  • 1 tbsp yellow mustard
  • 1 cup shredded sharp cheddar cheese
  • 3 large eggs
  • 1 cup Bisquick or pancake mix
  • Optional: sliced pickles for topping
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, brown the ground beef with chopped onion until no pink remains. Drain excess fat.
  3. Stir in ketchup and mustard; cook until heated through.
  4. In a separate bowl, whisk together eggs and Bisquick until smooth. Fold in cheddar cheese.
  5. Layer half the beef mixture in a greased baking dish, followed by half the egg mixture. Repeat layers.
  6. Bake for 30-35 minutes or until golden brown on top.
