Salad Ingredients
  • 2 medium cucumbers sliced thinly
  • 1 cup carrots julienned
  • 1/2 cup red bell pepper sliced thinly
  • 1/4 cup green onions chopped
  • 1/4 cup cilantro chopped
Dressing Ingredients
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1 teaspoon sesame seeds toasted

Method
 

Prepare the Vegetables
  1. Slice the cucumbers thinly and place them in a mixing bowl.
  2. Julienne the carrots and add them to the bowl.
  3. Slice the red bell pepper thinly and add to the bowl.
  4. Chop the green onions and cilantro, then add to the bowl.
Make the Dressing
  1. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, and sugar until well combined.
  2. Add the toasted sesame seeds to the dressing and mix well.
Combine and Serve
  1. Pour the dressing over the vegetables in the mixing bowl.
  2. Toss everything together until the vegetables are well coated with the dressing.
  3. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.

Notes

For a spicier version, add sliced chili peppers to the salad.
