Method
Prepare the Dough
- In a mixing bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
- In a stand mixer, combine flour and salt. Add the yeast mixture and mix until a dough forms.
- Knead the dough for about 10 minutes until smooth and elastic. Place in a greased bowl, cover with a towel, and let rise for 1 hour.
Shape the Bagels
- Preheat the oven to 425°F (220°C).
- After the dough has risen, punch it down and divide it into 8 equal pieces.
- Roll each piece into a ball, then poke a hole in the center and stretch it to form a bagel shape.
- Place the shaped bagels on a baking sheet lined with parchment paper.
Boil the Bagels
- In a large pot, bring water, baking soda, and honey to a boil.
- Boil each bagel for about 1 minute on each side, then remove with a slotted spoon and return to the baking sheet.
- Sprinkle with sesame or poppy seeds if desired.
Bake the Bagels
- Bake in the preheated oven for 20 minutes or until golden brown.
- Remove from the oven and let cool on a wire rack.
