Ingredients
  

Dough Ingredients
  • 4 cups all-purpose flour
  • 1 tablespoon active dry yeast
  • 1 tablespoon granulated sugar
  • 1 1/2 teaspoon salt
  • 1 1/2 cups warm water (110°F)
  • 1 tablespoon vegetable oil for greasing
Boiling Water Ingredients
  • 2 quarts water
  • 1 tablespoon baking soda
  • 1 tablespoon honey
Topping Ingredients
  • 1 tablespoon sesame seeds optional
  • 1 tablespoon poppy seeds optional

Method
 

Prepare the Dough
  1. In a mixing bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
  2. In a stand mixer, combine flour and salt. Add the yeast mixture and mix until a dough forms.
  3. Knead the dough for about 10 minutes until smooth and elastic. Place in a greased bowl, cover with a towel, and let rise for 1 hour.
Shape the Bagels
  1. Preheat the oven to 425°F (220°C).
  2. After the dough has risen, punch it down and divide it into 8 equal pieces.
  3. Roll each piece into a ball, then poke a hole in the center and stretch it to form a bagel shape.
  4. Place the shaped bagels on a baking sheet lined with parchment paper.
Boil the Bagels
  1. In a large pot, bring water, baking soda, and honey to a boil.
  2. Boil each bagel for about 1 minute on each side, then remove with a slotted spoon and return to the baking sheet.
  3. Sprinkle with sesame or poppy seeds if desired.
Bake the Bagels
  1. Bake in the preheated oven for 20 minutes or until golden brown.
  2. Remove from the oven and let cool on a wire rack.

Notes

Bagels can be stored in an airtight container for up to 3 days or frozen for longer storage.
