Preparation
- Preheat the air fryer to 400°F (200°C).
- Poke several holes in each potato with a fork to allow steam to escape.
- In a bowl, coat the potatoes with olive oil, salt, and black pepper.
Cooking
- Place the potatoes in the air fryer basket in a single layer.
- Cook for 35-40 minutes, turning halfway through, until the potatoes are tender and the skin is crispy.
- Check for doneness by inserting a fork; it should slide in easily.
Serving
- Remove the potatoes from the air fryer and let them cool for a few minutes.
- Cut a slit in the top of each potato and fluff the insides with a fork.
- Top with sour cream and chives if desired, and serve warm.
Notes
For extra flavor, try adding garlic powder or paprika to the oil mixture before coating the potatoes.
