Ingredients
  

Potatoes
  • 4 medium russet potatoes washed and scrubbed
Toppings
  • 2 tablespoons olive oil for coating
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 cup sour cream optional for serving
  • 1 cup chives chopped, optional for serving

Method
 

Preparation
  1. Preheat the air fryer to 400°F (200°C).
  2. Poke several holes in each potato with a fork to allow steam to escape.
  3. In a bowl, coat the potatoes with olive oil, salt, and black pepper.
Cooking
  1. Place the potatoes in the air fryer basket in a single layer.
  2. Cook for 35-40 minutes, turning halfway through, until the potatoes are tender and the skin is crispy.
  3. Check for doneness by inserting a fork; it should slide in easily.
Serving
  1. Remove the potatoes from the air fryer and let them cool for a few minutes.
  2. Cut a slit in the top of each potato and fluff the insides with a fork.
  3. Top with sour cream and chives if desired, and serve warm.

Notes

For extra flavor, try adding garlic powder or paprika to the oil mixture before coating the potatoes.
